Cut the florets in half lengthwise so they lay flat on the baking sheet, and, instead of tossing the broccoli with olive oil before roasting, use olive oil spray instead for an ultra thin coating of oil. - 4 cups (10 ounces) of broccoli florets
- Olive oil spray
- Pinch of salt
- Pinch of pepper
- Preheat the oven to 400 degrees. Trim the florets so they’re all about the same size and then cut them in half lengthwise.
- Spray a baking sheet with a thin coating of olive oil and place the florets on it, flat side down. Spray the broccoli with the olive oil spray and sprinkle on the salt and pepper
- Roast on the bottom rack of the oven for 10-15 minutes or until the broccoli is starting to brown and can be easily pierced with a toothpick but is still a bit firm (i.e. crisp tender).
