The first time we heard about pizza crust made out of cauliflower we said “that’s kooky”, but then we tasted it and said “wow, that’s delicious!” Since then, we’ve been on a mission to create all kinds of Kooky Pizza. Our philosophy is that you can make pizza crust out of almost any food with the right recipes and techniques.

Kooky Techniques

The starting point for any Kooky Pizza is a Kooky Pizza crust. Kooky Pizza crusts fall into one of four categories depending on the technique used to make them.

POURED CRUSTS are made from a pourable batter that’s baked in a parchment lined deep dish pizza pan. Some of the poured crusts you might like are:
1. Quinoa Flour Pizza Crust
2. Naan Pizza Crust
3. Almond Egg White Pizza Crust 

ROLLED CRUSTS are made from dough. The dough for these pizza crusts is mixed up and then dumped onto a parchment lined pizza tray where it’s rolled out with a pizza roller. Some of the rolled crust you might like are:
1. Greek Yogurt Pizza Crust
2. Quick Gluten-Free Pizza Crust
3. Beer Pizza Crust 

PRESSED OR SPREAD CRUSTS fall in between the above two categories. The mixture that forms these crusts is not pourable but it’s not pliable like dough either. It’s more of a loose mixture than can be shaped with your hands, OR a thick batter than can be spread into a circle with an offset spatula.  Some of the pressed crusts you might like are:

2. Eggplant Pizza Crust
3. Simple Sweet Potato Pizza Crust 

SMASHED CRUSTS start with a main ingredient that is mashed and/or smashed before being combined with other ingredients and shaped into a pizza crust. Some of the smashed pizza crusts you might like are:

2. Russet Potato Pizza Crust
3. Cauliflower Pizza Crust
